VINIFICATION
Complete vinification in 400L barrels, exclusively in new French oak.
Gentle pressing, static settling, and slow, natural fermentation in barrel.
Aged for 24 months on fine lees, without racking, with occasional stirring depending on the wine’s aromatic evolution.
Bottled at the estate, without aggressive filtration.
TASTING NOTES
Color: Bright pale gold with silver reflections.
Nose: Intense and elegant, combining white flowers, dried fruits, candied citrus, acacia honey, and a hint of warm stone.
Palate: Both rich and finely chiseled; the natural roundness of Sémillon is balanced by saline tension and a subtle noble bitterness.
Finish: Long, pure, and slightly chalky, with notes of fresh hazelnut and lemon zest.
Aging potential: 10 to 15 years. Can be enjoyed now after decanting.
FOOD PAIRING
Roasted lobster, scallops, sea bass baked in a salt crust, truffled poultry, and aged hard cheeses.
