VINIFICATION
Complete vinification in 400L barrels, exclusively in new French oak.
Each lot is fermented directly in barrel, allowing for natural micro-oxygenation and gentle, precise tannin extraction.
Barrel fermentation with manual punch-downs and meticulous temperature control.
Aged for 24 months on fine lees, without racking, to enhance complexity and a velvety texture.
Bottled at the estate, without aggressive filtration.
TASTING NOTES
Color: Deep garnet with intense reflections.
Nose: A noble bouquet of ripe black fruits (blackcurrant, blackberry), supported by notes of cocoa, cedar, graphite, and a touch of sweet spice.
Palate: Powerful attack, firm yet polished tannins, a full and elegant mid-palate underpinned by mineral tension.
Finish: Long, straight, and persistent, with nuances of blond tobacco and licorice.
Aging potential: 12 to 15 years. Decant for at least 2 hours when young to reveal its full complexity.
FOOD PAIRING
Roasted or dry-aged cuts of beef, noble game, herb-crusted rack of lamb, black truffle, or dark chocolate desserts with high cocoa content.
